Ingredients
For the filling:
700g of seasonal fruit (e.g. apples, pears, rhubarb, plums, blackberries)
Zest of 1 lemon (or another citrus fruit)
1 teaspoon ground cinnamon or ginger
50g sugar
For the crumble topping:
35g cold butter, cut into cubes
80g plain flour
1 teaspoon ground cinnamon or ginger

Preparation
Preheat the oven to 200 °C.
For the filling:
Prepare the fruit by washing and peeling it, removing the core or stone and chopping into equal sized bite size pieces.
Add the fruit, zest, spices, and sugar to a pan and cook on a gentle heat until softened.
Spoon the mixture into a baking dish.
For the topping:
Rub the butter into the flour and spices, using your fingertips, until it looks like breadcrumbs.
Sprinkle the topping over the filling. Bake in the oven for 25 minutes, until the topping is golden, and the filling is bubbling.
Serve with cream, ice cream or custard.
Hints and Tips
🍎Swap the fruit for whatever is in season.
🍐Hard fruits, such as pears, apples & rhubarb, will take longer to soften than softer fruits (plums & berries).
🥜Try adding chopped nuts or oats to the topping to give it more texture.
